Indonesia is a country which has the most active volcanoes in the world with 30% of the active volcano. Volcanic eruptions result in negative impacts such as damage to infrastructure, polluted air by SO2, H2S, NO2 and other dangerous dust particles. It caused outbreaks of disease in refugee camps.
The rapid spread of diseases due to decreased immune refugees. Food aid is generally fast food such as instant noodles that add to the bad condition of refugees.
Efforts to do is improve the nutrition of food. Within 72 hours after a disaster is very difficult to make a complete nutritious processed foods. Refugees need food that can be eaten quickly, easily consumed and nutritionally complete.
Sausage is a food innovation has been very interested in Indonesian society. This innovation will integrate fortification of processed foods such as sausages containing bromelain enzyme in pineapple waste, meat and cassava as a carbohydrate source. The reason for choosing bromelain enzyme because it can improve human immunity, and the presence of highly abundant pineapple waste in the Indonesian tropical agriculture. With this innovation is expected to improve the nutritional status of food aid and enhance the immune system.
